Abstract

The article discusses the economic feasibility of establishing the production of children's goods based on the use of local raw materials with a high potential for import substitution. It is proved that for the sustainable and rapid development of the food industry in Tajikistan, it is necessary to ensure regular production of food products, including children's products such as dry cereals, fruit and vegetable concentrates, puree and canned fruit. This strategic task requires the modernization of processing enterprises through the introduction of domestic technologies and equipment. The study provides an economic justification for the development of a new technology for the production of dry rice porridge with the addition of local raw materials, which meets modern healthy eating requirements. Calculations of the cost per unit of production, profit margin and profitability of dry rice porridge with added hawthorn concentrate showed that the proposed product is twice as cheap as similar imported products. At the same time, the profitability of the product was 18%. The research results are of scientific and practical interest for developing programs for the development of the food industry in the region, business planning for the diversification of industrial and regional products, and long-term business plans for the development of individual manufacturing enterprises.
